The United States government is attempting to replicate the manufacture of Swiss cheese. This is to end the need for importing this cheese. Researchers have followed every detail the Swiss use. American cows were even fed grass mowed from Alpine pastures. Evanston cheese makers believe that Swiss atmosphere is responsible for the holes. American cheese manufacturers expect to make a lot of money once they learn the manufacturing process.
